Fried red beans with eggplant

Cut egg-plant into small chunks and fry them for 5 minutes on a preheated pan.

Add beans into the pan and fry for 3 more minutes.

Add diced bell pepper, finely chopped garlic and green onions, season with pepper and fry for 2 more minutes. Add tomato juice and mix everything.

Top with smoked salmon and garnish with parsley.

- eggplant (medium) - 1/3 piece
- smoked salmon - 50 g
- tomato juice - 0.5 ounce
- garlic - 1/2 clove
- rapeseed oil - 1 tablespoon
- chives - 1 stalk
- parsley - a couple of leaves
- sweet powder pepper - to taste
- salt - to taste
