Coconut Soup with Prawns and Quinoa

Put quinoa into a pan, add 100 ml of salted water, bring to a boil and cook for 10 minutes.

Quarter tomatoes and mushrooms, slice ginger and chop lemongrass.

Put all ingredients in a pan, add coconut milk, prawns and bamboo shoots. Season with salt and pepper and cook for 5 minutes.
