Salmon with Artichoke

Peel mushrooms, halve them and fry on a preheated pan with 1 tablespoon of rapeseed oil (2 min).

Add cut artichoke, tomatoes, soy yoghurt, 2 tablespoon of water and fry for 2 more minutes. Season with salt.

Fry salmon fillet in a separate pan for 5 minutes each side. Season with salt and pepper.

Serve everything on a plate, sprinkle with grated cheese and pomegranate seeds. Season with lemon juice.
