Red Lentil Soup with Ginger

Add red lentils into a pan with 100 ml of water, add a pinch of salt and cook for 10 minutes.

Peel and dice onions. Peel and finely grate ginger.

Add onions and ginger into a preheated pan with rapeseed oil and fry for 2 minutes.

Peel and grate carrots, add them into the pan and fry while stirring for 3 minutes.

Place the content of the frying pan into the pan with lentils and season with pepper. Blend everything until smooth and creamy.

Serve with dried tomatoes and roasted pine nuts. Sprinkle with lemon juice.

- dried tomatoes in sunflower oil - 20 g
- pine nuts - 10 g
- rapeseed oil - 1 tablespoon
- lemon - 1 slice
- parsley - a couple of leaves
- hot powder pepper - to taste
- salt - to taste
- whole grain bread - 50 g
