Quinoa Mango Pudding

Put quinoa in a pan and add 50 ml of water, bring to a boil and cook for 15 minutes.

Combine flour, baking powder and egg, add soy yoghurt, maple syrup and diced mango. Add cooked quinoa into the mixture, mix well and place into a glass baking dish. Top with mango pieces.

Place into a preheated oven (200°C, upper and lower heat) for 30 minutes.

Garnish the dish with cinnamon and peppermint.

- quinoa - 15 g
- egg - 1/2 piece
- mango (medium) - 1/4 piece
- soya yogurt (natural) - 1 tablespoon
- baking powder - 1/8 tsp.
- maple syrup - 1 tsp.
- peppermint - a couple of leaves
- cinnamon - to taste
